Summer Court Feta Cheese Dip & Veggies
When I read about the Summer Court, all I could think of was fresh summer veggies, bright plates of fish and fresh garden finds, and light snacky type dishes that aren’t too heavy in the Summer heat. This is one of my favorite go-to snack dips for when I want something delicious and decadent without it being heavy.
The versatility of this dip is endless. Add some more Olive Oil and some Wine Vinegar and it becomes a vinaigrette for salads, stir into hot pasta for a delightfully creamy and yet light dinner, or cold pasta for pasta salad, spread onto Pita or Flatbread, scoop with bites of chicken, steak, or shrimp, stuff mushrooms, or top your eggs and toast with it. Or if you just want something to nibble on, fresh carrots, peppers, and cucumbers make a great vehicle for this tasty treat. Just be prepared to want to add this to everything you eat.

Fetaaaaa
Ingredients:
4 oz of Feta cheese. I buy mine in 8oz blocks from Aldi, if you’re making this for a party, obviously add more and adjust the seasonings. I’m using half the block because I’m just making a snack dip for the afternoon.
1-2 Tablespoons of Olive Oil
1tsp + of each Garlic and Onion powder
1/2 tsp of each Dried Thyme and Oregano
Salt and pepper to taste
1tbsp of sour cream, or cream cheese.
Bonus Points for sprinkling in some fresh parmesan too, it just adds to the deliciousness.
Directions:
Get a bowl appropriate for the amount you’re making, and crumble the feta into the bowl. Yes, you could use pre-crumbled Feta, but it’s usually considerably dryer than when you buy the whole block, and we want the moisture so it gets creamy. I prefer a fork for my smash and mix tool, so crumble your block, smash with the fork, add in the Olive Oil (a little at a time), Sour Cream/Cream Cheese, and the herbs and seasonings. Smash and stir it all together until it’s smooth, rich, and herby. Thats it, it’s finished.

Feta & Herb Dip
Today I’m chowing down on this dip and some fresh sweet peppers, cucumbers, and carrot sticks. Like I mentioned at the top, you can literally turn this simple cheese dip into a pasta sauce, a flavor packed addition to pasta salad, sandwiches, cracker spread, a condiment for your meats, top a baked potato with it, dip fresh veggies in it, or turn it into a salad dressing; the options are virtually endless. I’m probably going to top my Chicken with it at dinner tonight.
