Lady Vanserra’s Autumn Salad

Salads are so versatile, and yet so easily become boring. We tend to get stuck on the need for lettuce, so let’s just skip it all together and make something fabulously Autumnal. Featuring Roasted Butternut Squash and sweet Honeycrisp Apples over a bed of fluffy Kale, this salad will help you get over your lettuce slump and into a hearty fall dish that you can dress up for dinner, or toss to the side for a lunch salad.
Ingredients
2 cups thinly sliced Tuscan Kale
1 cup chopped Honey Crisp Apple
1 cup cubed and roasted butter nut squash
1/2 cup Pepitas
1/2 cup Sunflower Seeds
1 medium red onion- soaked and diced.
1/4 Cup Parmigiano Romano, flakes or fresh grated.
Dressing
3 tbsp unsweetened apple sauce
1/2 cup olive oil
1/4 cup white wine vinegar
Salt & Pepper
3 teaspoons Hemp Seeds
Directions
In the bottom of a large bowl, combine all the dressing ingredients with a whisk.
Begin adding in all your chopped vegetables and fruit and seeds, and toss until well coated with dressing. Top with the cheese, and serve on the side of your protein of choice, or as a wonderful stand alone. I love pairing this with some oven roasted Salmon or Chicken for lunch or dinner.
