Cran-Apple Feta Salad

I’ve been hesitant to post a salad recipe, because toxic diet culture has had me starving myself on salads for the majority of my life. How many times did I order a salad at a steak restaurant, so I didn’t come off as “too much” while eating? How often have I tried to get by on a handful of spinach and skipped on croutons in the name of “dieting?” Ugh.

This salad though, is filling. This salad is a meal, and one I can eat for days in a row without feeling bored or ever feeling deprived. You probably already have most of the ingredients in your fridge and pantry anyway, and if you don’t, the ones you need aren’t pricey.

Ingredients:

  1. Romaine Lettuce, Spinach, Baby Chard. about 1 cup each.

  2. 1 Gala Apple, diced up

  3. 1/2 cup dried cranberries

  4. 1/4 cup sunflower seeds

  5. 3 tbsp hemp hearts

  6. feta cheese crumbles, measure with your heart

  7. 2 small cucumbers, chopped

  8. 1/4 of a red onion, diced

  9. Olive oil, and White Wine Vinegar, about 1/4 cup each

  10. Salt and pepper to taste.

Directions:

Get a big bowl, and starting with the dressing ingredients, add about 1/4 cup Olive Oil, and 1/4 cup of the Vinegar (If you don’t have white wine vinegar, apple cider vinegar is a good second choice!) to your bowl, along with the feta cheese crumbles. Use a fork to whisk and smash the cheese into the vinaigrette you’re creating. Now add your chopped cucumbers, the red onion, apple, and your greens. Make sure your greens are shredded or chopped into fork friendly pieces so you’re not making a mess with each bite. Finally, add your cranberries, sunflower seeds, and hemp hearts, salt and pepper to your preference. Toss everything well until it’s all coated in that tasty Feta Vinaigrette

Feel free to add whatever protein you desire to add to this and make it a meal! I love pairing it with Chicken Breast or Salmon. Additionally, if you’re feeling really Autumn Court, add a side of roasted butternut or acorn squash to really round it out into a beautiful plate.

If you’ve made a large salad and don’t have anyone else eating it with you, this salad will keep reasonably well in the fridge for about 3 days before it becomes a little soggy. If you do have to share, try not to get too stabby with the fork. It’s not Eris you’re eating with, after all.
