Cran Apple Breakfast Bars

I have 80 million jars of apple foods in the pantry now and STILL have apples a plenty for baking and snacking. I’m truthfully tired of looking at these pretty red fruits, and so I make the things.

I wanted a granola bar that doesn’t have weird ingredients, is sweet but not crazy with sugar, and tastes like Autumn. This is what I got.

Cran Apple Breakfast Bar

Ingredients

  1. 1 tbsp coconut oil

  2. 3 tbsp honey

  3. 3 cups Oatmeal

  4. 1/2 cup apple cider

  5. 3 tbsp chia seeds

  6. 1/4 cup cranberries

  7. 1 medium/large apple of choice, chopped into bite size pieces.

  8. 1/2 tsp cinnamon

  9. 2 tbsp apple butter

  10. 1/2 tsp sugar to top (optional)

Directions

In a large bowl, combine cinnamon, Oatmeal, and chia seeds. Pour in Apple Cider and stir until well combined.

Add in Apples, Cranberries, and honey, and stir until everything is well incorporated, and sticky.

Well Mixed

Get yourself a baking sheet with edges, I believe this is a 9×13inch pan. Line with parchment paper. Preheat your oven to 425°F. Now take your mix and spread it evenly over the lined baking sheet, roughly 1/2 inch thick.

Spread it Out

Place your loaded baking sheet in the oven and let it bake for about 20-25 minutes, or until everything has reached a solid golden brown across the top. If you want to sprinkle some sugar on top, this is when you do it.

Trim the edges of the granola, as they might be a little darker than the rest of the pan, and uneven. (The trimmings make good yogurt topping!) And then cut into bars. We got 10 out of this batch.

These are soft on the inside and crunchy on the outside, and with the fresh apple I recommend storing them in the fridge.
