Breakfast Hash
One of the easiest breakfasts I make, it takes maybe 5-10 minutes of prep time and then 12 minutes of cooking. This is the breakfast I make when I’m not really sure what the heck I want, and I have a ton of random veggies to use up. You can switch up the meat and eggs for whatever protein you prefer, change out spices to whatever you happen to be feeling that day, and throw it all in one skillet and call it good. You can follow my veggie list or you can create your own, use this “recipe” as a guideline and have fun!

Ingredients:
Bacon, Ham, Sausage, Chorizo- whatever breakfast meat you’re digging. Today I used Bacon.
Veg: Sweet potato, mushrooms, green onion, zucchini, Cabbage. the options are endless! Try to find a combination of at least 4 veggies to create the base of your meal.
If you’re not using a meat that produces it’s own fat, you can sub butter, avocado oil, or coconut oil.
Salt and pepper to taste
* to make this vegan friendly, you can absolutely sub the meat for tofu. just make sure that you’re adequately lubricating your pan with coconut oil or avocado oil.

Directions:
In a medium large skillet- cook your bacon, brown your sausage, cook your ham. When it’s done, remove it from the pan and reserve half of the juices/fat left behind. If you’re going meatless or using a leaner meat, use your oil or butter replacement to thoroughly lubricate your skillet.
Chop up your veggies. Today I had zucchini, mushrooms, sweet potatoes and green onions, chopped into bite sized pieces. Heat your skillet to medium, and toss in your firm veggies first- sweet potatoes- and let it cook for about 5 minutes, covered, and then add in the rest. Stir around every few minutes, making sure that everything gets cooked evenly. At the end, add in your meat and mix it up. Salt and pepper if needed. For added protein, add an egg on top, or even some hemp hearts or a sprinkle of chia seeds. Sometimes I’ve also added a spoon of cottage cheese and mixed it in, it’s super good. Top it off with some cubed avocado for healthy fat!
The beauty of this Veggie Hash is that it’s so adaptable and simple, you can literally just toss in whatever veggie mix you have lurking in the bottom of your fridge or even in your freezer. This morning’s assortment was literally a random medley of miscellaneous veggies that survived the Crisper Clean Out of 2022. I make this breakfast once a week, usually after the weekend and right before I do the next week’s grocery shopping, because that’s when I clean out the crisper drawers and prep the fridge for the new additions. It’s light enough that I don’t feel weighed down, and satisfying and filling enough that I’m not back in the fridge an hour later scrounging for something to top off my stomach.
